A fantastic wine to drink when young, however careful cellaring of 5-20 years will be rewarded
2014 was a dry growing season - a cool and windy spring resulted in slightly reduced yields. February was warm, inducing high rates of ripening. A much-needed two inches of rain slowed ripening, and subsequent perfectly mild conditions allowed fabulous flavour development during the ensuing weeks
The grapes where hand harvested at their optimum flavour and sugar equilibrium. After a light crushing and destemming, we fermented the must in small batch open fermenters. After 10 days of hand plunging and temperature control, we pressed the must to mature French oak barriques for maturation of 10 months prior to blending and bottling.
