NOW by PAXTON stands for NATURAL ORGANIC WINE. The consumer market demand has been growing steadily for Preservative Free/Natural wines. As leaders in organic production, it was obvious that Paxton needed a product for this category. In addition to Natural, PF & Organic, we wanted to make a young, drink NOW style shiraz that was different from our existing Shiraz styles.

Palate: | Medium bodied drink “NOW’ style of wine. Blackcurrant and fresh red berry fruits are followed by a brilliant mid palate showing layers of fruit intensity and polish. Silky smooth tannins give a soft savoury finish that highlights the power and presence Shiraz can exude. |

Vintage: | 2020 posed many challenges throughout Australia. Another intense drought year through the growing season was followed by one of the most devastating bushfire seasons this country has ever seen. Fortunately McLaren Vale was largely unaffected by this devastation and the early signs indicate 2020 to be a very special vintage; one to savour. Moderate weather throughout the picking season, combined with lower yields allowed the flavours to develop harmoniously and in balance. Varietal expression was excellent with Shiraz and Grenache showing lovely intense flavour without excessive tannin or alcohol. Tempranillo and Graciano are showing lovely plum and pepper characters and will be intriguing to see how they develop after time in oak and bottle. |

Vinification: | The grapes were picked at optimum sugar and flavour equilibrium. They were tipped into open top fermenters and gently hand plunged for 14 days, extracting the vibrant characteristics of the vineyard. When primary fermentation was complete, we pressed to tank for secondary fermentation before bottling. |
