Well, you thought 2021 was good but I bet you hadn’t heard about 2022 yet! With most of the country experiencing extreme La Niña conditions, in McLaren Vale we were hit with the lucky stick and enjoyed plenty of soil moistening rain through the winter but no extreme events. Budburst was a breath of new life after a long cool Winter and conditions were ideal up to flowering where things went a bit haywire. Crazy Melbourne type weather blew a lot of the flowers away before they could turn into fruit… but less fruit, more quality and coming off a bumper 2021 vintage it helped balance things out. We had a lovely cool summer, which helped ripening happen nice and slow, just the way we like it. Vintage was well spread out with fine days through most of March allowing us to choose when to pick and preserve stunning, natural acidity.

    • Tasting Notes

      Paxton 2022 CAB.pdf

    • Colour

      Lindt 95%

    • Bouquet

Scents of native mint and wild, untamed blackberries floating through the sun-scattered air, hearts are warmed as the sun fades with smokey notes of hot chocolate warmed on a small campfire.

    • Palate

Length yet opulent softness, the linear tannins run off the ridge into a bed of ripe, fleshy blood plums and stewed rhubarb and cocoa crumble.

    • Peak Drinking / Cellaring Potential

      Christmas 2023 - BETTER: Winter 2024 - KEEP: Winter 2024-2026

    • Food Matches

Slow cooked lamb korma with sweet potato

    • Vinification

At Jones Block we harvested on two separate occasions to have the best of both worlds; lifted varietal characters and acidity in the earlier harvest matched with black fruit flavours and softer tannins from the later harvest. Thomas Block was the last to be harvested as it our coolest vineyard in McLaren Vale. This vineyard adds some more spiced characters and a touch of elegance, all batches were separately fermented to be blended further down the track. A little new oak in puncheon form helps to digest the chewier tannins, the rest of the wine in a combination of used French oak puncheons and barriques of varying ages for 7 months.
