The Cabernet Sauvignon showcases a single varietal blend from our premium vineyards situated at Thomas Block and Jones Block and highlights our Biodynamic and Organic vineyard practices. Each vintage, our winemaker hand selects and blends the top blocks to create this very popular Cab Sauv offering.

This wine is showing beautiful varietal expression, with soft tannins, and is ready to drink now, however careful cellaring of 10 – 15 years will be rewarded.

“From both the Thomas and Jones Blocks, the former the coolest and latest pick, the latter picked across two tranches for flavour depth and verve; 10 months in mostly seasoned oak, with a little new. Fragrant with violets, peppery spices, kelp and leafy herbal notes, there is also considerable depth of darker fruit – blackberry, plum and black cherry. That continues on the palate, the impact fruit-sweet, herbal and structured, boisterous but all in good balance. It’s more than handy value.”

  • Vintage Notes

    2021 was one of those dream vintages that don’t come along every year; cool, refreshing nights and dreamy, sun-kissed days without any extended stretches of intense heat. After a warmer than usual November there were only four days above 40 degrees. It was mainly dry throughout the ripening season with the odd spattering of just enough rain to keep the grapes beautifully plump, juicy and full of bright fruit flavours and time to dry out in between so disease pressure was low. The gentle undulation between these varying temperatures and perfectly healthy canopies allowed us to really ponder picking times, spending plenty of time out in the vineyard tasting grapes getting the timing of picking just right. The generous harvest has rewarded us with delightfully delicate fruit and varietal characters, with each variety singing its own tune. Natural acids are in perfect balance and the smooth, sensuous tannins completed by an epic energetic vibration that we can’t wait to share with you.

    The CAB evokes the sounds and senses of the Australian bush, hiking in the Victorian high country amongst grazing cattle and wild brumbies. Respiring the fresh mountain air whilst scrambling along a rocky ridge, a seat around the campfire in the evening is well deserved. Sandalwood, mountain pepper leaf and wild blackberries are keeping you company on this walk.

    Like balancing on a fallen log across a gurgling creek, this wine is finely equilibrated between acidity, juicy berry flavours and plush but elongated tannins. A touch of spice on the finish brings you back to your resting place by the fire.

  • Peak Drinking / Cellaring Potential

    Good: Christmas 2021 Better: Winter 2022 Best: Winter 2023-2026 This wine gives the best of both worlds: fantastic when young, however careful cellaring for up to 10 years will be rewarded.

  • Vinification

    At Jones block we harvested on two separate occasions to have the best of both worlds; lifted varietal characters and acidity in the earlier harvest matched with black fruit flavours and softer tannins from the later harvest. Thomas Block was the last to be harvested as it our coolest vineyard in McLaren Vale. This vineyard adds some more spiced characters and a touch of elegance, all batches were separately fermented to be blended further down the track. A little new oak in puncheon form helps to digest the chewier tannins, the rest of the wine in a combination of used French oak puncheons and barriques of varying ages for 7 months.
